Easy Falafel Burgers

 


You might have had falafels made by someone else, but have you tried them yourself? They’re super easy to make, healthy, and absolutely delicious. Serve with pitta bread and salad leaves.

Serves 4 
Prep time: 10 minutes
Cooking time: 6 – 10 minutes

Ingredients

  • 400g chickpeas, rinsed and drained 
  • 1 garlic clove, chopped 
  • A handful of flat-leaf parsley, chopped 
  • 1 tsp ground cumin 
  • 1 tsp ground coriander 
  • ½ tsp chilli powder 
  • 2 tbsp plain flour 
  • 2 tbsp olive oil 
  • 4 pitta bread, round 
  • A handful of lettuce leaves, any kind of lettuce 
  • 1 small red onion, thinly sliced 
  • 200g tomato salsa 

Instructions

1. Add the chickpeas into a food processor along with the onion, garlic, parsley, spices, and flour. Blend until almost smooth. 

2. Season with salt and black pepper and pulse again for two seconds. 

3. Shape the mixture into four burgers with your hands. 

4. Heat the oil in a non-stick frying pan over a medium-high heat, add the burgers and cook for three minutes on each side until lightly golden. 

5. Slice each pitta open and toast, either under the grill or in the toaster. 

6. Add some lettuce leaves, red onion and tomato salsa into each one and top with a burger. Serve immediately.
